Nutella Freezer Fudge

I was SO excited when I found this healthy recipe for freezer fudge.  The original recipe is from Damy Health Website if you want to check it out.

This recipe is SO easy you won't believe it!  Only five ingredients and no cooking time.

AND it's super healthy!

I've always loved freezer treats and of course, CHOCOLATE!!

Hope you enjoy it as much as I have.

{The only thing I did differently than the recipe is I used almond butter instead of the Almond Hazelnut butter since that's what I had on hand.}

Nutella Freezer Fudge

Prep time: 5 Minutes
Yield: Makes 18-20 Pieces of Fudge

Ingredients:
1/2 Cup Natural Almond Hazelnut Butter
1/2 Cup Coconut Oil (Room Temperature)
1/2 Cup Natural Cocoa Powder
1/2 Cup Pure Pumpkin Puree
1/4 Cup Agave Nectar (more if you like it sweeter)

Directions:
Place all ingredients into your food processor and blend until completely smooth and buttery (this could take a few minutes).
Spray an 8×8 baking dish with a healthy non-stick cooking oil.
Place fudge batter into your baking dish and spread evenly.
Cover with saran wrap and freeze for 3-4 hours.
Remove from freezer and cut into 18-20 bites.
Serve and enjoy!

{Mock} Chicken Noodle Soup

This is one of my favorite soup recipes ever.

It's especially good for when your family is sick.

I'm vegetarian so that's how I make it, but you could probably alter the recipe a little and use real chicken too.

Either way, I'm sure it would be yum!

Mock Chicken Noodle Soup

 6 cups water
2 T. McKay's chicken style seasoning (you can find in health food stores)
Onion, chopped
Celery, chopped
1-2 T. margarine
21/2 cup fine egg noodles
1 can Fri-chik or diced-chik, with juice (mock chicken substitute)
Dash salt, if needed

Combine all ingredients in a large pot except for the noodles.  Cook until vegetables are tender.
Add noodles and cook until done.

ENJOY!

German Salad

If you are from North Dakota or ever have visited anyone here, you probably know that people here eat well.

Maybe it's that most people here are German or Scandinavian.
Or, it's that the weather is often cold and people have more time to learn how to cook. {grin}
OR, it's just MY opinion that their cooking is good.

Regardless, when I married Dave and moved here, I was dumbfounded by all of the GOOD food that people cook here.

Did I say healthy?  Not necessarily.  But good, WOW!!  You've never tasted better.

And believe it or not, most of the foods here have at least SOME heavy whipping cream in them.  Whenever you ask what the "secret" ingredient is, you can be almost SURE it's gonna be cream.

Growing up, I never ever ate real cream except for once a year on my pumpkin pie.  And, I still can't bring myself to use it in my own cooking.  It just screams "20 extra lbs" every time I see it.  And I'm not usually obsessed with staying away from things with calories.

However, that having been said, we will go back to the original point of my rambling.  And that is the fact that the food here is awesome!  And I love all of the old time German recipes that I've learned to enjoy since I've been here.  Like Cheese Pockets, Kuchen, and Sweet Rice (which I'll have you know, I couldn't STAND before I moved here! The rice that is.  They know how to cook it).

So today I want to share a little of the wealth by letting you in on a yummy salad I learned to make here.  NO, nothing fancy or hard to make like the cheese pockets (I still need to learn those), but still just as delicious as any of the other recipes.

{And no, this one doesn't have cream in it!}

{Disclaimer:  If I have offended anyone by calling this a German Salad and you thought it was a, say, "Polish" salad, I am SO sorry.  I don't know what it's officially called so I named it myself!}

So here it is, my very favorite North Dakota GERMAN salad.

{It's really NOT much different from a regular salad, just a few extra ingredients.  But those extra ingredients make all of the difference in the world!!}

German Salad

Romaine or Iceberg lettuce (chopped into as small of pieces as you can)
Cucumbers, diced
Tomatoes, diced
Mushrooms, diced (can be optional, but I added these since I love mushrooms!)
Frozen Peas
Shredded Cheese
Boiled Eggs
Mayonnaise
Salad Seasoning (I like to use McCormick's but you can use whichever you like best)

Chop all veggies into small pieces.  Add frozen peas and shredded cheese.  Add the chopped eggs last since you want them to hold together as much as possible.  Very last, add enough mayonnaise to make the salad moist.  Sprinkle seasoning on the top before serving.  Enjoy!

Note:  The people here usually layer the ingredients until they add the mayonnaise.  But since they still mix all of the ingredients together at the end, I see the layering as an extra step.  You can do it whichever way you'd like to though!!

This salad is excellent for special occasions.  We like to use it for family outings and holiday dinners.  It's a great way to add flare to any dinner and I haven't met one person yet who doesn't like it!!

Hope you enjoy!!

Homemade Bread

Yesterday I promised you that I would share my recipe for homemade bread.  So here it is!!!  Can't wait to share.

I LOVE the smell of fresh homemade bread baking in my oven.  It's so scrumptious to have a hot piece dripping with butter, YUM!  I have some baking in there right now and I can't wait to enjoy it.

I thought about doing a full picture tutorial for this post, but decided that it would be too difficult to explain bread making in pictures.  If you haven't made your own bread before, it is very hard to do an effective tutorial without having the person right there with you.  So I'm just going to give you the recipe and hope that you have either made bread or have someone who can help you figure it out!!

This is my mom's famous bread recipe.

Whole Wheat Bread

4 cups warm water (105 to 110 degrees)
1/4 cup brown sugar or honey
2 T. yeast
4 tsp. salt
1/3 cup canola or olive oil
2 cups unbleached white flour
 whole wheat flour

Combine warm water and sweetening; sprinkle or gently stir yeast into mixture.  Let foam (5-10 min).  Add salt, oil, and white flour.  Gradually add whole wheat flour, mixing first with a wire wisk, then a wooden spoon.  When unable to mix, turn onto table and knead with hands.  Knead until stiff dough-dough should pop back when pressed.  Let rise in oiled bowl, cover with towel.  Let rise 50 minutes in warm place.  Punch  down; knead for a couple of minutes (may need to sprinkle additional flour while kneading dough still sticky).  Divide dough into four parts.  Form loaves, place in non-stick bread pans (8 1/2 x 4 1/2 x 2 1/2).  Let rise again for 20 minutes. Bake at 400 degrees for 10 minutes, then 350 degrees for 15 minutes, and 325 for 5 minutes.

Ok, so that's my mom's recipe she gave me.  I have a few things I really need to try to explain though, or you may have some wild looking bread when you are done. ha!

Here are my tips:
I use brown sugar for sweetening.
The flour ends up being about 9-11 cups of flour in all.  You are supposed to add whole wheat flour {after the two cups of white flour are added], till the texture is just right, SO NOT A SPECIFIC AMOUNT.  {I use four cups of whole wheat flour and then add the rest white for a lighter texture.  I usually end up using about 9 cups of flour altogether, my mom uses 11.  We are not sure exactly why that is...it could be our climates differences.}
Once you start kneading the bread, I like to set my timer for 8 minutes to make sure I knead it long enough.  Just something I prefer doing.  It may not work for you.
When you let the bread rise for the second time in the loaf pans, it may take a little longer than 20 minutes for the loaves to rise.  I try to make sure that they double in size.  Just make sure not to leave them for too long or they will flop. (If that happens, you can always punch them down and raise the loaves again.)
Also, I like to separate the dough into three sections instead of four.  I just like larger loaves than my mom does.

Hope that wasn't TOO confusing.  Like I said before, hopefully you have made bread before or have someone to help you figure this out!  It is an extremely YUMMY recipe if you can get it just right!!

Enjoy your day and hope you enjoy making your bread!

Pumpkin Bread

Every fall I get so excited about the yummy food that goes along with the season.  Pumpkin bread is one of my very favorite fall foods.  This recipe is the best I have ever tasted.  Whoever made this one up got just the perfect proportions. (I can say that because it wasn't me!)  I made two loaves last night and this morning there is only a little left!  Hooray for fall yums!

I would have included a tutorial but there is no need for one.  This stuff is super EASY to make!

Pumpkin Bread

2 1/2 c. flour
2 c. sugar
1 1/2 tsp. salt ( I use 1)
1 1/2 tsp. baking soda
1/4 tsp. baking powder
3/4 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. allspice
1 1/2 c. pumpkin
1/2 c. water
1/2 c. shortening
2 eggs
1 c. raisins or chips (It's good without them too!)

Mix sugar, pumpkin, eggs (whip), and softened butter till creamy.  Add rest of ingredients.  Bake @ 350 degrees for 30-45 min. (I always do 45)

You can also make this frosting that came with the recipe thought I have never tried it.

Boiled Butterscotch Frosting
2/3 c. brown sugar
1/4 c. margarine
1 c. nuts
2 T. milk

Mix margarine, brown sugar and nuts. Stir in milk.  Spread and put in oven. Broil 550 degrees until frosting bubbles~3 min. appr.

Hope you enjoy!  Have a blessed weekend!!

Oh How Pinteresting Wednesday

This is my first time to link up with Oh how Pinteresting Wednesdays with Michelle at the The Vintage Apple. My awesome friend Bec at Little Lucy Lu found this cool linkup last week and since I love Pinterest SO much, I thought why not?  And I love the Vintage Apple site anyway!  (She likes turquoise like I do so she's gotta be cool, right?!) Yes, she is!

This week's theme for me is food simply because I LOVE food.  I found SO many cool recipes just browsing through Pinterest.  At my house lately it seems like we've been eating the SAME old thing every day, or at least a cycle of the SAME things. Sound familiar? So I needed some inspiration and Pinterest is definitely the place to go for that!  LOL

Here's some of the Yum recipes I found.

Don't these look yummy?  I REALLY want to learn how to make homemade rolls
(I make homemade bread, but for some
reason, it's not the same)

This Danish Sweet Bread looks heavenly!!  I would
LOVE to wake up to this in the morning sometime...
(We'll see if I can get hubby to make it and
bring me breakfast in bed, haha)

I LOVE how beautiful this fruit roll is!
I wonder if it tastes as good as
it looks?

I know I wanna make these!  Such cute
and delicious mini fruit pizzas!

These would make AWESOME
little treats for a summer party!

And these are pretty much to DIE for!

I love how the shapes of the fruit
show through on these popsicles

And I like these because watermelon stuff is
my FAVORITE!!!  Aren't these adorable?

AND since my family LOVES Mexican food,
I think this is FIRST on the
list to try...what a pretty way to eat bean dip!
