Every fall I get so excited about the yummy food that goes along with the season. Pumpkin bread is one of my very favorite fall foods. This recipe is the best I have ever tasted. Whoever made this one up got just the perfect proportions. (I can say that because it wasn't me!) I made two loaves last night and this morning there is only a little left! Hooray for fall yums!
I would have included a tutorial but there is no need for one. This stuff is super EASY to make!
Pumpkin Bread
2 1/2 c. flour
2 c. sugar
1 1/2 tsp. salt ( I use 1)
1 1/2 tsp. baking soda
1/4 tsp. baking powder
3/4 tsp. cinnamon
1/2 tsp. cloves
1/2 tsp. allspice
1 1/2 c. pumpkin
1/2 c. water
1/2 c. shortening
2 eggs
1 c. raisins or chips (It's good without them too!)
Mix sugar, pumpkin, eggs (whip), and softened butter till creamy. Add rest of ingredients. Bake @ 350 degrees for 30-45 min. (I always do 45)
You can also make this frosting that came with the recipe thought I have never tried it.
Boiled Butterscotch Frosting
2/3 c. brown sugar
1/4 c. margarine
1 c. nuts
2 T. milk
Mix margarine, brown sugar and nuts. Stir in milk. Spread and put in oven. Broil 550 degrees until frosting bubbles~3 min. appr.
