Ann of Green Gables {Spring Party}

What do you do when the snow won't go away, spring won't come, and everyone is sick of not being able to go outside?

Have an Anne of Green Gables Tea Party?  That's exactly what we did!  And it was absolutely fantastic!

I started with a book that I got from Sullivan Entertainment not long ago called Cooking with Anne of Green Gables.

And we made Potato Soup along with Apple Cake for our special tea party.  Yum, yummy!

Then we made some tea, got out our special tea set, with sugar, creamer and all, and had a party!  The girls loved it!  {Except for Whitney was not in the mood for pictures, as you will see further in the post!}

Then we put on our Anne of Green Gables music and enjoyed our party.

{I used a lace tablecloth over my turquoise one, and also reused my spring banner from my centerpiece.  I made another banner quickly out of lace hearts and used the lace hearts for under the bowls. }

What a blast!!  The recipes were SO delicious!!  You will want to try them as soon as you can!

Here are the recipes.


Potato Soup

3 to 4 medium potatoes, quartered
3 cups boiling water
1 tsp. salt
2 cups undiluted evaporated milk
1 T. grated onion
3 T. butter
a pinch of pepper
1/2 cup grated cheese (Mozzarella recommended)

Together, cook the potatoes, boiling water and salt in a covered saucepan for 25 minutes, or until tender.  (Part chicken or beef stock may be used instead of water.)  Drain and reserve the liquid and press potatoes through a seive.  Combine evaporated milk, onion, butter, and pepper in large saucepan.  Heat, but do not boil.  Stir in sieved potatoes.  Reheat and add water if necessary.  Season to taste.  Stir in grated cheese.  Heat until cheese melts.  Serve garnished with chopped parsley.  Makes six servings.  

{I didn't follow the soup recipe to a T, but wanted to give you the original recipe anyway.  I added carrots and celery and didn't follow as many steps with the potatoes as they say to.  I just cooked the carrots with the celery first in the water and butter.  Then I added lots of water and the potatoes with the seasonings and cooked everything till it was done.  I am not sure if I have ever followed the recipe of a soup exactly because they are so easy and not much you do can go wrong.  I also would change to cheddar cheese if I made this again because of the stringy nature of mozzarella.}

Apple Cake

2 large eggs
1/2 cup of oil
3/4 cup sugar 
1 tsp. vanilla
1 and 1/2 cups all purpose flour
2 tsp. baking powder
a pinch of salt
3 T. water
1/2 tsp. cinnamon
3 or 4 apples, sliced and cored

Mix together eggs, oil, water, and vanilla.  Add sifted dry ingredients.  Mix.  Pour half of batter into oiled 8" square pan.  Spread apples over batter.  Sprinkle with 3 T. sugar, 1/2 tsp. cinnamon, and 1 tsp. flour.  Spread rest of batter on top.  Bake at 350 degrees for 1 hour, or until golden brown and crusty.  Other fruit mixtures can be used (blueberries, cherries, etc).  

Now all we need to do is make a visit to Prince Edward Island! {grin}
